Sherry Chicken Marengo

Ingredients

  • 2-1/2 lb Chicken
  • 1 tsp Salt
  • 1 Dash Pepper
  • 4 T Olive Oil
  • 1 Chopped Onion
  • 1/2 Clove Minced Garlic
  • 1/2 cup Chopped Tomato
  • 1/4 cup Sherry
  • 2 T Flour
  1. Cut chicken into pieces.
  2. Sprinkle with salt, pepper and flour
  3. Brown in oil. Set aside
  4. Saute onions and garlic in same pan
  5. Add chicken and rest of ingredients
  6. Cover, simmer until tender (30-40 minutes)
