Scrambled Eggs with Seafood
- 1 tbsp. olive oil
- 1-2 cloves garlic, finely chopped
- 2-3 oz. seafood (e.g. peeled prawns)
- 2 oz. dwarf runner beans precooked for 3-4 mins
- 1 oz. serrano ham finely diced
- salt & pepper
- 3 eggs beaten
- Heat the oil in a nonstick saucepan and add the chopped garlic. Fry 2-3 mins until golden.
- Stir in prawns and cook until done (about 2 mins).
- Add beans and ham and season.
- Add fried eggs, cook until lightly scrambled, and serve.
