Scrambled Eggs with Seafood

Ingredients

  • 1 tbsp. olive oil
  • 1-2 cloves garlic, finely chopped
  • 2-3 oz. seafood (e.g. peeled prawns)
  • 2 oz. dwarf runner beans precooked for 3-4 mins
  • 1 oz. serrano ham finely diced
  • salt & pepper
  • 3 eggs beaten
  1. Heat the oil in a nonstick saucepan and add the chopped garlic. Fry 2-3 mins until golden.
  2. Stir in prawns and cook until done (about 2 mins).
  3. Add beans and ham and season.
  4. Add fried eggs, cook until lightly scrambled, and serve.
