Scrambled Eggs and Brie
½ cup water
1 cup brie cheese, cut in small pieces
Shavings of Asiago (American asiago) or Parmesan cheese
Butter – for pan
Whisk together eggs and water, and add some fresh salt and pepper. Heat butter in a large skillet, on medium heat. Add in eggs, and cook til almost done. Sprinkle on brie cheese and place pan under broiler (lower rack) and cook until eggs begin to colour – maybe 2-3 minutes.
Dust with parsley, asiago shavings, and serve on a warmed platter on a trivet, at the table.
