Sausage Bean Soup

Ingredients

  • 3/4 lb bulk Italian sausage
  • 1/2 cup chopped onion
  • 1 garlic clove, minced
  • 1 can (15-1/2 oz) butter beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14-1/2 oz) diced tomatoes, undrained
  • 1 can (14 oz) beef broth
  • 1 Tbsp minced fresh basil, or 1 tsp dried basil
  • 2 Tbsp shredded Parmesan cheese
  1. In a large saucepan, cook sausage, onion and garlic until the sausage is browned. Drain. Add beans, tomatoes, broth and basil
  2. Cover and simmer 10 minutes
  3. Sprinkle each serving with Parmesan cheese
