Saturday Beef Noodle Soup

Ingredients

  • 1 lb ground beef
  • 1 c chopped onion
  • 1 clove garlic, minced
  • 1 small green pepper chopped
  • 1 can condensed beef broth
  • 1 can condensed vegetable soup
  • 1 can tomatoes (one lb)
  • 2 1/2 cups water
  • 1 c uncooked noodles
  • 1/4 c chopped parsley
  1. Brown beef in large saucepan. Remove and drain on paper towels. Pour off all but 3 T of drippings.
  2. Sauté onions, garlic and pepper in drippings until soft. Stir in broth, soup, tomatoes and water, crumble in ground beef.
  3. Bring to boiling and stir in noodles
  4. Cook 10 minutes or until noodles are tender. Stir in parsley.
