Salsa Chicken And Rice
1 large jar of salsa, your choice
5-6 frozen or fresh chicken breasts (we use the frozen boneless, kinless ones)
lemon juice
salt and pepper to taste
Instructions
Arrange chicken in a lined casserole dish (lined with foil, enough to cover bottom then fold up and around chicken). Sprinkle chicken with a scant 1/4 cup lemon juice, salt and pepper to taste. Pour 1/2 jar of salsa over chicken, cover with the foil and bake at 375 for about 1 hour
