Salmon Salad with Avocados Recipe

Ingredients

  • 3  California avocados
  • Romaine, Red Leaf Lettuce or mescaline
  • 1 can (15 1/2 oz)  salmon (or 2- 7 3/4 oz cans) — chilled
  • 2 tablespoons  green onion — sliced
  • 1/2 cup  celery — slicedLemon-Parsley Dressing
  • 2/3 cup oil
  • 3 tbsp lemon juice
  • one clove of minced garlic
  • 1/4 tsp dry mustard
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 tbsp minced parsley in jar.
  1. Halve, pit and peel avocados, arrange on lettuce-lined plates.
  2. Drain slamon and separate into chunks with a fork. Toss salmon lightly with celery and
    green onions.
  3. Fill avocados with salmon mixture. Drizzle with Lemon-Parsley

Lemon-Parsley Dressing Instructions

  1. Cover and shake until blended.
