Sally Lunn Muffins
1/4 cup shortening
1/3 cup sugar
2 eggs, beaten
2 cups sifted flour
4 teaspoons Rumford Baking Powder
1/4 teaspoon salt
2/3 cup milk
1. Cream shortening, add sugar gradually creaming until light and fluffy.
2. Add eggs and mix well.
3. Sift flour, Rumford Baking Powder and salt together and add alternately with milk to creamed mixture.
4. Pour into shallow cake pan or casserole (10″ x 10″) and bake in moderately hot oven (400° F.) 20-25 minutes. Cut crust into squares and break apart to serve.
