Salad with Gorgonzola Vinaigrette
The greens and vinaigrette alone make a wonderful salad, but Gorgonzola grated on top is a fabulous addition. Gorgonzola is a creamy, sweet blue cheese with a slightly nutty flavor.
3 tablespoons wine vinegar
2 tablespoons mayonnaise
1 teaspoon salt
½ teaspoon sugar
½ cup olive oil
2 tablespoons minced fresh parsley
6 cups clean mixed lettuce
4 ounces Gorgonzola cheese
Whisk together the vinegar, mayonnaise, salt and sugar until smooth. Add the oil in a stream, whisking until the dressing is emulsified and stir in the parsley and pepper to taste.
Toss the lettuce with the dressing and coarsely grate some cheese over each serving.
