Salad and Bean Pizza


  • 1 (16-ounce) Boboli pizza crust
  • 8 cups mixed salad greens, such as endive, radicchio, arugula and Boston lettuce
  • 1 (15.5-ounce) can cannellini beans, drained and rinsed
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 1 (7-ounce) jar roasted peppers, drained and cut in 1/2-inch pieces
  • 12 pitted Kalamata olives, chopped
  • 1 small red onion, thinly sliced
  • 1 cup grated light mozzarella
  1. Preheat oven to 450ยบ
  2. Cut greens into 1-inch pieces. Lightly mash about half the beans with the back of a fork. Toss greens and beans together and add roasted peppers, olives, onion and remaining beans.
  3. In a small bowl, combine the olive oil, balsamic vinegar, salt and pepper. Toss with the lettuce mixture.
  4. Top Boboli crust with mozzarella cheese and bake for 10 minutes. Gently press greens down onto warm pizza with a spatula
  5. Serve immediately
