Rum Raisin Chess Pie

Ingredients

  • 1/2 cup raisins
  • 1 cup water
  • 1 1/2 cup sugar
  • 1 Tablespoon all-purpose flour
  • 3 eggs
  • 1/4 cup milk
  • 1/2 cup melted margarine
  • 1 1/2 teaspoon rum extract
  • 1/2 cup coconut
  • 1 unbaked 9-inch pie crust
  1. Preheat oven to 350 degrees.
  2. Cook raisins in water in saucepan for 10 minutes. Cool.
  3. Mix sugar, cornmeal, flour, eggs, and milk in bowl. Stir in raisins and next 3 ingredients.
  4. Pour into pie shell and bake for 45 minutes.
