Roasted Sweet Potatoes
The potatoes will turn tender before they brown, so continue roasting until they are golden and crisp. With their delicate sweetness, and a touch of tart lemon juice, these are a perfect compliment to pork.
3 sweet potatoes (about 1-1/2 pounds
3 tablespoons olive oil
2 tablespoons fresh lemon juice
Preheat the oven to 425’F.
Scrub the potatoes and cut them into 1-inch thick wedges. In a large bowl toss them with the oil until coated and spread in a single layer on a large aluminum jelly-roll pan.
Roast the potatoes for 40 to 45 minutes, or until they are browned on the bottoms. Remove from the oven and immediately sprinkle with the lemon juice and salt and pepper to taste
