Roasted Portabella Mushrooms
Roasting is a wonderful way to bring out the “meatiness” in portabella mushrooms. These also make great “burgers” topped with cheese and a slice of tomato, sandwiched with crusty bread.
3 tablespoons olive oil
2 tablespoons red or white wine vinegar
1 teaspoon Worcestershire sauce
1 garlic clove, minced
1/2 teaspoon dried crumbled rosemary, or 1 1/2 tesapoons chopped fresh
4 Portabella mushrooms, wiped clean and stems discarded
Combine the first 5 ingredients in a sealable bag and shake well. Add the mushrooms and let them marinate about 30 minutes at room temperature.
Preheat oven to 375’F. Put the mushrooms on a shallow baking pan lined with foil and bake for 35 to 40 mintues or until browned and tender. Slice each and serve warm.
