Roasted Carrot Pot Stickers on Frisee with Ginger Clove Vinaigrette Recipe

Ingredients

  • 2 each carrots, peeled & chopped
  • 1/4 yellow onion, peeled & split
  • 1/2 tbsp. canola oil
  • 3/4 tsp. honey
  • 1/8 tsp. curry powder
  • 1 1/2 tsps. cilantro, chopped
  • 1/4 tsp. black pepper
  • 5 spring-roll wrappers
  • 1 1/2 heads FRISEE (also known as, French
    endive or chicory)

Vinaigrette

  • 3 tsps. rice vinegar
  • 2 tbsps. verjus
  • 1/2 tbsp. canola oil
  • 3/4 tsp. ginger, chopped & juiced
  • 1/2 lemongrass, stalk julienne
  • 1/2 garlic clove, minced
  • 1/16 tsp. ground cloves
  • 3 tsps. chives, chopped

Pot Stickers Instructions

    1. Toss carrots and onions in oil and roast at 350┬░ until tender.
    2. Remove from oven and mix with honey, curry, and cilantro.
    3. Season with pepper and pulse in food processor. Let cool and then fill wrappers.

Vinaigrette Instructions

  1. Combine all ingredients and let stand for 4-6 hours before serving.
