Rice and Pea Soup

Ingredients

  • 1/4 C. butter
  • 1/4 C. minced onion
  • 1 1/2 C. peas
  • 1/2 tsp. salt
  • 5 C. chicken broth
  • 3/4 C. raw rice
  • juice of 1 or 2 lemons
  • pepper to taste
  • minced fresh parsley
  1. Sauté onions in butter until golden. Add peas and salt and continue cooking about 4 minutes
  2. In another saucepan, heat broth to boiling, add rice, cover and simmer for about 20 minutes. Combine with peas mixture and season with more salt, pepper and lemon
  3. Ladle soup into bowls and sprinkle with parsley.
