Rhubarb Custard Pie

Ingredients

  • 1 cup sugar
  • 2 egg yolks
  • 1/2 cup milk
  • 2 Tbsp flour
  • pinch salt
  1. Stir all together
  2. Place unbaked pie crust in pie plate. Cover with rhubarb on top of crust. Pour above mixture over rhubarb
  3. Bake at 375° about 1 hour
  4. Put meringue on top and set back into oven to brown

Note: Can also use a top crust if desired before baking, instead of meringue.
