Rhubarb Cream Pie

Ingredients

  • 2 C. diced rhubarb
  • 2 egg yolks
  • 2 T. butter1/4 C. light cream
  • 1 C. sugar
  • 1/8 t. salt
  • 1/4 C. sugar
  • 1 pie shell baked, cool
  • 2 T. cornstarch
  1. Melt butter in skillet and add rhubarb and 1 C. sugar. Cook slowly until rhubarb is tender, stirring frequently.
  2. Combine 1/4 C. sugar, cornstarch,well-beaten egg yolks, cream, and salt. pour into rhubarb mixture and cool until thick.
  3. Cool slightly and pour into pie shell.
  4. Cool thoroughly.
