Red Beans And Rice


1 lb. dried red kidney beans

1 pkg. of beef smoked sausage, cut into bite size pieces

1 clove garlic

1 medium onion

1/2 green pepper

2 tbsp. oil

Salt to taste

Cooked rice


Wash and pick over beans. Cover with water. Add remaining ingredients and simmer for 1 to 1 1/2 hour or add water as needed until beans are tender and soup is thick. Serve over cooked rice.
