Real Lemon Meringue Pie

Ingredients

  • 1 baked pie shell
  • 1-1/3 cups sugar
  • 6 tbsp cornstarch
  • 1/2 cup Real Lemon
  • 4 eggs, separated
  • 1-1/2 cups boiling water
  • 2 tbsp margarine

Meringue

  • egg whites
  • 1/4 tsp cream of tartar
  • 1/3 cup sugar
  1. In medium saucepan, combine 1-1/3 cups sugar and cornstarch. Add Real Lemon
  2. In small bowl, beat egg yolks. Add to lemon mixture. Gradually add water, stirring constantly. Cook & stir until thickened (about 8 to 10 minutes). Remove from heat. Add margarine and stir
  3. Pour into pie crust
  4. Beat egg whites with 1/4 tsp cream of tartar. Gradually add 1/3 cup sugar, beating until sugar is dissolved and stiff peaks form. Spread on pie
  5. Bake at 300-350 for 12 to 15 minutes or until meringue is browned
  6. Cool at room temperature for 1 hour. Chill before serving
