Raspberry Pie

Ingredients

  • 2 (10 oz) pkgs. raspberries, thawed
  • 2 cups vanilla wafer crumbs
  • 1/2 c sugar
  • 1 tsp cinnamon
  • 5 T melted butter
  • 1 envelope unflavored gelatin
  • 1/4 c cold water
  • 1/2 tsp lemon peel
  • 1/2 pint whipping cream
  • 1 tsp vanilla
  1. Drain raspberries, reserving 1 c juice. Combine crumbs, sugar, 1/2 tsp of cinnamon & the butter. Pat into a 10″ pie pan
  2. Bake 375′ 8-10 min. Cool
  3. Soften gelatin in water. Mix the reserve juice, the remaining cinnamon & lemon peel and heat to boiling
  4. Remove from heat. Add gelatin & stir until melted. Chill until mixture begins to thicken
  5. Whip cream. Add vanilla
  6. Fold raspberries, gelatine mixture & whipped cream together
  7. Pour into pie shell. Chill
  8. Decorate with additional whipped cream
