Quick Prune Bread

Description Rich brown sugar, and orange juice add a lovely touch to this bread.

1 loaf

1 3/4 C. flour
1 C. packed brown sugar
1 C. diced prunes
3/4 C. chopped walnuts
4 tsp. baking powder
1 Tbsp. grated orange peel
1 tsp. salt
1/2 tsp. baking soda
1/2  C. orange juice
1/4 C. oil
2 eggs, beaten

Methods/steps
In large bowl thoroughly combine flour, sugar, prunes, walnuts, baking powder, orange peel, salt, and baking soda.  Stir in orange juice, oil and, eggs just until mixed.  Turn into greased 9x5x3-inch loaf pan.  Bake in preheated 350 degree oven for 45 minutes or until pick inserted in center comes out clean.  Cool in pan5 minutes, then invert on rack and cool completely, or serve warm with  butter or marmalade.
