Quick Mix Walnut Whole Wheat Bread
Makes 2 loaves
3 cups whole wheat flour
1-1 / 2 to 2 cups all-purpose flour
1-1 / 4 cups quick oats
1 / 3 cup sugar
2 envelopes FLEISCHMANN’S RapidRise Yeast
2 teaspoons salt
1-1 / 2 cups water
3 / 4 cup milk
1 / 4 cup butter or margarine
1 cup chopped walnuts
In large bowl, combine whole wheat flour, 1 cup all-purpose flour, oats, sugar, undissolved yeast and salt. Heat water, milk, and butter until very warm (120o to 130oF); stir into flour mixture. Stir in walnuts and enough remaining flour to make soft dough. Knead on floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
Divide dough into 2 equal pieces; roll each piece to 10 x 6-inch rectangle. Beginning at short end, roll up tightly as for jelly roll. Pinch seam and ends to seal. Place, seam side down, in 8-1 / 2 x 4-1 / 2 -inch loaf pans. Cover; let rise in warm, draft-free place until doubled in size, about 1 hour.
Bake at 400oF for 25 to 30 minutes or until done. Remove from pans and cool on wire racks.
