Quick Mix Swedish Limpa
This round loaf, with distinctive slashes on top, will soon become a favorite among family and friends. That’s one reason why the yield is 2 round loaves from this recipe.
Makes 2 round loaves
6-1/2 cups all-purpose flour, divided
2 cups rye flour
1/4 cup firmly packed brown sugar
2 teaspoons salt
2 teaspoons caraway seed
2 teaspoons grated orange peel
2 envelopes Fleischmann’s RapidRise Yeast
2 tablespoons butter
2-2/3 cups very warm water (120° F – 130° F)
Directions
Set aside 1 cup of all-purpose flour.
Mix remaining flours, sugar, salt, caraway seed, orange peel, and undissolved yeast in a large bowl. Combine butter and very warm water; add to dry mixture. Mix in enough reserved flour to make a soft dough. On a floured surface knead 8 to 10 minutes. Let dough rest 10 minutes.
Shape into 2 balls. Set on greased baking sheets. Cover; let rise in a warm draft-free place until doubled in size, about 30 to 40 minutes. Slash tops.
Preheat oven to 400° F. Bake for 30 minutes or until done. Remove from sheets; cool on wire racks.
