Quick and Easy Irish Stew

Ingredients

  • 1 T vegetable oil
  • 2 lbs. lamb, well trimmed, cut into 1 inch cubes
  • 2 cups boiling water or broth
  • 4 carrots, cut into 1/2 inch slices
  • 1 turnip, peeled and diced
  • 4 potatoes, peeled and cubed
  • 1 onion, sliced
  • salt & pepper to taste
  1. Heat vegetable oil in Dutch oven. Add lamb. Brown on all sides. Add water or broth. Cover and simmer gently for 1 hour
  2. Add carrots, turnip, potatoes, onion and salt and pepper. Cook an additional 30-45 minutes, or until meat and vegetables are tender.
