Quick Corn Soup

Ingredients

  • a scant 1/2 cup sliced onions
  • 3 slices bacon
  • 1 1/2 tablespoons all-purpose flour
  • 1 package (10 ounces) frozen whole kernel corn
  • 1 1/2 cups milk
  • 1 1/2 teaspoons minced parsley
  • 1/4 teaspoon pepper
  1. Chop the sliced onions into small pieces to make 1/4 cup finely chopped. Chop the 3 slices bacon
  2. Combine the bacon and onion in a 2-1/2 quart microwave-safe casserole. Microwave on high (100%) until bacon is crisp and onion is tender, about 4 to 6 minutes, stirring half way through the cooking time. Drain.
  3. Add the 1 1/2 tablespoons flour, 1 package corn, 1 1/2 teaspoons fresh parsley, and 1/4 teaspoon pepper and stir to combine. Microwave on high (100%) until slightly thickened and corn is tender, about 5 to 7 minutes, stirring twice during cooking time.
