Quick Coffee Cake with Streusel Topping
Ingredients
1 1/2 cups sifted flour
1/2 cup sugar
2 teaspoons Rumford Baking Powder
1/2 teaspoon salt
1 egg, beaten
2/3 cup milk
3 tablespoons melted shortening
Instructions
1. Sift dry ingredients together.
2. Combine egg, milk, and shortening and add to dry ingredients, stirring just enough to moisten.
3. Pour into greased loaf pan (9″ x 9″).
4. Cover with Streusel Topping.
5. Bake in moderately hot oven (425° F) 25 minutes.
Streusel Topping:
2 tablespoons butter
2 tablespoons sugar
1 teaspoon ground cinnamon
1/4 cup sifted flour
1/4 cup dry bread crumbs
Mixing Instructions:
1. Cream butter and sugar together.
2. Add cinnamon, flour and crumbs.
3. Mix to the consistency of coarse crumbs.
