Quiche Grits
1 unbaked pie shell
1 c. shredded Swiss cheese
1 c. chopped onion
1 (3 oz.) can evaporated milk
3 eggs
1 c. cooked hot grits
1 tbsp. parsley
1/2 tsp. dry mustard
1/8 tsp. cayenne pepper
1 c. chopped ham or tuna
Instructions
Sprinkle ham and cheese on bottom of unbaked crust. Beat remaining ingredients. Pour over cheese and ham in pie shell. Bake at 375 degrees for 40-50 minutes (until knife inserted comes out clean).
