Pumpkin Waffles

2 1/2 cups all-purpose flour
1/3 cup brown sugar, packed
2 1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
4 large eggs
1 cup milk
1 cup buttermilk
1 cup prepared pumpkin (canned)
6 tablespoons melted butter

In a medium bowl combine flour, brown sugar, baking powder, soda and spices. In a large bowl combine eggs, milk, buttermilk, pumpkin and butter. Beat until smooth. Slowly add dry ingredients and mix until combined.

Follow manufacturer’s directions for cooking in waffle iron. Always preheat iron, and spray with cooking spray or oil.

This recipe works well for belgian waffles.

May top finished waffles with whipped cream and sprinkle with nutmeg, or use regular syrup or maple syrup.
