Pumpkin Pound Cake
1 cup butter, softened to room temperature
3 cups granulated sugar
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/2 teaspoon pumpkin pie spice
1 15-oz. can prepared pumpkin
1/3 cup cinnamon liqueur*
*Subsitution: 1 teaspoon cinnamon, and 1/4 cup water
In a large mixing bowl cream together butter and sugar; add eggs. In a separate bowl sift together flour, baking powder, baking soda, salt, cinnamon (if not using liqueur), and cloves. Add dry mixture to creamed mixture and mix until combined. Add pumpkin, liqueur (or water). Mix for 2 minutes.
Pour batter into greased and floured tube or bundt pan.
Bake at 325 degrees F. for about 90 minutes. Cool on wire rack at least 15 minutes before removing from pan.
