Pumpkin Log


Mix in order)


1 cup sugar

3/4 cup water

2/3 cup pumpkin

1 tsp. baking soda

1/2 tsp. cinnamon

3/4 cup flour



3 tsps. soft margerine

8 oz. soft cream cheese (Philly)

3/4 tsp. vanilla

1 cup powdered sugar

nuts (optional)


Preheat Oven: 400 degrees. Place parchment paper on bottom of 9×12″ baking sheet. Mix first six ingredients thoroughly. Pour into baking sheet. Bake 11-minutes. Remove from oven, let cool completely. Invert baking sheet onto towel sprinkled with powder sugar. Mix remaining ingredients and spread onto cake surface, leaving a half-inch gap on the sides. Gently roll into log. Sprinkle with powder sugar and serve.
