Pumpkin Fritters

1 cup cooked pumpkin (or canned)
1 egg
2 tablespoons milk
1/2 cup all-purpose flour
1 teaspoon baking powder
1 tablespoons granulated sugar
1/2 tablespoon brown sugar
1 teaspoon ground cinnamon
1/4 tsp. nutmeg
1/2 tsp. grated lemon zest

Vegetable oil (for deep-frying)
cinnamon sugar (2 T. sugar, 1 T. cinnamon)

Mix together pumpkin, egg and milk. Add flour, baking powder, sugars and spices; mix well.

Drop by tablespoonsful in hot vegetable oil (375 degrees F.)

Cook for 2 minutes on each side. Fritters should be a light brown color when done. Drain on absorbent paper towels and sprinkle with cinnamon-sugar mixture. Serve warm.
