Pumpkin Donuts

1/4 cup melted butter
1 cup granulated sugar
1/2 cup brown sugar
1 cup prepared canned pumpkin
2 eggs, beaten
4 cups Hodgson Mill white flour, sifted
5 teaspoons baking powder
1 teaspoon salt
1 teaspoon nutmeg
1/2 teaspoon ginger
1 teaspoon cinnamon
1/2 cup milk
Confectioners sugar (to sprinkle on finished donuts)

Cream together butter and sugar; add pumpkin and beaten eggs; set aside. In a separate bowl combine dry ingredients including spices. Add to creamed mixture alternately with milk, and mix until combined. Chill dough for at least 2 hours.

Roll out dough to about a 1/2 inch thickness. Cut with doughut cutter, and fry in deep fat for about 1 minute on each side.

Drain on paper towels, transfer to platter and sprinkle with confectioners’ sugar.

Makes about 3 dozen doughnuts.
