Pumpkin Date Nut Pudding
Ingredients
2 cups canned pumpkin
1 cup evaporated milk
2 tablespoons melted butter or margarine
2 tablespoons vanilla
2 cups all-purpose flour
2 cups granulated sugar
2 teaspoons baking soda
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
2 cups chopped walnuts
1 cup chopped dates
1 cup raisins
1 teaspoon grated orange peel (orange zest)
Instructions
In a large bowl, combine pumpkin, milk, butter and vanilla; set aside. In a separate bowl combine flour, sugar, soda, baking powder and spices. Blend in with pumpkin mixture; add walnuts, dates, raisins and orange peel.
Pour batter into greased 9 x 13-inch baking pan.
Bake at 350 degrees F. for 60 minutes, or until knife inserted in center comes out clean.
Serve with whipped cream or hard sauce.
