Pumpkin Apple Gingerbread

2 cups unbleached flour
1/4 tsp. salt
1/4 tsp. baking soda
1/2 cup butter or margarine
1/2 cup granulated sugar
1 cup pumpkin
1/4 cup molasses
1 1/2 tsp. ground ginger
2 tsp. Clabber Girl Baking Powder
1/2 tsp. pumpkin pie spice
1/4 cup packed brown sugar
2 eggs
1 medium apple peeled and shredded
1-2 Tbsp. finely minced candied ginger

Preheat oven to 350 degrees. Grease 8X4X3 inch bread pan. Combine and sift together flour, salt, baking soda, ginger, baking powder and pie spice. Cream butter, sugar, and brown sugar in large mixer bowl until light and fluffy. Add eggs, one at at time, beating well after each. Add pumpkin, molasses and apple; mix. Add flour mixture, mix until well blended. Spoon into bread pan. Sprinkle top with candied ginger.

Bake for 1 hour or until done. Turn onto wire race to cool.
