Pound Cake Waffles
2/3 cup shortening
1 cup granulated sugar
4 eggs, separated
1/4 cup milk
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour, sifted
1/2 teaspoon salt
1 1/4 tablespoons Clabber Girl Baking Powder
Preheat waffle iron. Cream shortening and sugar until light, add well-beaten egg yokls, milk, and vanilla. Sift together flour, salt, and Clabber Girl Baking Powder. Add to liquid batter and gently fold in stiffly beaten egg whites.
Cook according to your waffle iron instructions.
Makes 6 four-section waffles.
Note: Pound Cake Waffles are also good topped with fruit and whipped cream.
