Potato, Sauerkraut & Beef Stew (CP)

Ingredients

  • 1 lb. small white potatoes, scrub & slice
  • 2 lbs. sauerkraut, rinse & drain
  • 1 med. onion, halve & slice thin
  • 1/4 cup dry white wine
  • 2 Tblsp. cornstarch
  • 1 (14 1/2 oz.) diced tomatoes with juice
  • 1/2 tsp. garlic pepper
  • 1/4 tsp. salt
  • 1 Tblsp. caraway seeds (optional)
  • 2 lbs. lean stew meat, cubed
  1. In a 5 qt. crockpot, layer the potato slices, then the sauerkraut, then top with onion slices
  2. In a medium bowl, blend together the wine & cornstarch until smooth. Stir in the tomatoes with juice, garlic pepper, salt & caraway seeds. Pour 2/3 of the tomato mixture over the onions. Top with beef cubes. Pour the remaining tomato mixture over all.
  3. Cover & cook on low for about 9 hours or until the beef and potatoes are tender
