Potato Parmesan Soup
- 8 peeled and chopped potatoes
- 3 green onions chopped (save green for garnish)
- 1 minced garlic clove
- 1 1/2 tbs. course ground pepper
- 1 tbs. salt
- 1 quart heavy cream
- 1 cup grated parmesan cheese
- Boil and puree potatoes.
- Add chopped white part of green onion, garlic, heavy cream, salt, and pepper. Cook on low heat for 30 minutes.
- Add parmesan cheese at the end of cook time. Set off burner and allow cheese to melt into soup.
