Potato Omelet

Ingredients

  • 2 potatoes peeled and diced
  • 1/4 Cup olive or veg oil
  • 1/2 Cup sliced green onions
  • 1/4 Cup minced parsley
  • 1 garlic clove minced
  • 6 eggs
  • 1/4 Cup water
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • sour cream
  • crumbled cooked bacon
  1. In a 12″ skillet cook potatoes in oil over med-high heat for 10 minutes till golden, stirring occasionally
  2. Add onions, parsley, garlic and cook till tender
  3. Reduce heat to medium
  4. In a bowl beat eggs, water, salt, pepper and pour over potato mix
  5. Cover and cook for 8-10 minutes till completely set
  6. Cut into wedges
  7. Serve with sour cream and bacon
