Potato Cheesy Soup

Ingredients

  • 1 qt cubed potatoes
  • 1 cup diced celery
  • 1 medium onion
  • 1/2 cup minced parsley
  • 1 qt. chicken broth
  • 1/4 cup each butter, flour
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 qt. milk scalded
  • 1 cup grated cheese sour cream, optional
  1. In a kettle combine potatoes, celery, onion, parsley and broth. Cook until the vegetables are tender. Put through a blender and puree.
  2. Melt butter, blend in flour, gradually stir in milk. Cook until thickened. Stir in potato mixture.
  3. Heat to boiling, stir in cheese.
