Potato & Cheddar Soup


  • 2 cups red skinned potatoes, peeled and cubed
  • 3 Tbsp butter
  • 1 small onion, finely chopped
  • 3 Tbsp flour
  • ground red pepper
  • black pepper
  • 3 cups milk
  • 1/2 tsp salt
  • 1 cup cooked ham, cubed
  • 1 cup (4-oz) shredded cheddar
  1. Bring 2 cups water to a boil in large saucepan. Add potatoes and simmer till tender; drain & set aside. Reserve liquid
  2. Measure 1 cup reserved liquid, adding more water if necessary; set aside.
  3. Melt butter in the same saucepan. Add onion and cook and stir till tender but not brown. Stir in flour and season to taste with pepper. Cook 3-4 minutes. Gradually add reserved liquid, milk and potatoes and salt to onion mixture; stir well. Add ham. Simmer over low heat for 5 minutes, stirring frequently
  4. Remove from heat and cool for 5 minutes
  5. Stir in cheese till melted
