Pork Fajitas

1 – 12 oz well trimmed pork tenderloin
2 Tbsp fresh lime juice
2 Tbsp canola oil
1 tsp jalapeno minced
Cookies Flavor Enhancer to taste
1 jar Cookies Premium Salsa – Mild or Medium
8 flour tortillas

Cumin Yogurt:
3/4 cup nonfat plain yogurt
3/4 tsp ground cumin

In a shallow dish, just large enough to hold the pork, combine lime juice, oil and jalapeno. Cut the tenderloin in half crosswise, sprinkle with flavor enhancer and add to the marinade, turning to coat completely. Refrigerate 2 to 4 hours, turning occasionally. Gently stir together the yogurt and cumin. Refrigerate until ready to use. Prepare a medium-hot barbecue fire. Oil the grill rack or coat with a non stick vegetable spray. Stack the tortillas and wrap in foil. Grill the pork, turning once or twice, for a total of 15 to 18 minutes, until cooked through. Set the tortilla packet at the edge of the grill for a few minutes to warm. Thinly slice the pork. Spread the tortillas with some of the cumin yogurt then divide the pork among the tortillas. Top with some of the salsa and roll up. Serve the remaining yogurt and salsa separately.
