Polish Dill Pickle Soup

Ingredients

  • 2 quarts chicken stock
  • 1 quart potatoes, cubed
  • 2 large dill pickles, shredded
  • 1 large carrot, shredded
  • 8 ounces dill pickle juice
  • 16 ounces heavy cream
  • 2 Tbs fresh dill, chopped
  1. Cook chicken stock with potatoes, carrot, and shredded pickles for 20 minutes.
  2. Add dill pickle juice and cream.
  3. Just before serving add fresh dill to hot soup.
