Polish Bean Soup

Ingredients

1 lb. dry Navy beans

2 qt. Water

1 lb. Polska Kielbasa or any sausage you like, halved and sliced in sm. pieces

1 (16 oz.) can sauerkraut

1 lg. onion, chopped

2-3 stalks celery, chopped

2 lg. carrots, chopped

Salt and pepper to taste

Instructions

Soak beans overnight or use quick method. Simmer beans 2 hours, then add all remaining ingredients and continue to simmer another 1 1/2 to 2 hours. Serve with cornbread. It’s great.
