Pizza By The Sea

Ingredients

  • 1 large fennel bulb
  • 2 tsp. olive oil
  • 4-oz fresh shrimp cleaned and shelled
  • 4-oz sea scallops rinsed and halved horizontally
  • 1/2 cup water
  • non stick spray
  • 1 10-oz pkg. refrigerated pizza dough
  • 1/2 10-oz jar light alfredo sauce
  • 1 cup shredded provolone, scamorza or mozzarella cheese
  1. Cut off and discard stalks and base of the fennel bulb (reserve some leaves for garnish). Wash bulb and remove wilted or brown leaves. Halve and core, cut crosswise into thin slices; set aside.
  2. In a large skillet heat oil. Cook shrimp and scallops over medium heat for 2-3 minutes or until opaque. Remove from skillet and set aside. Add fennel slices and water to skillet, bring to boil, reduce heat,cover and simmer 2-3 min or until just tender. Drain and set aside.
  3. Spray pizza pan with non stick spray. Unroll dough, divide into 4 pieces. Shape each piece into a ball roll out each ball on lightly floured surface to 1/4 inch thickness. Bake at 350ยบ until light golden brown
  4. Spread alfredo sauce onto each crust, top with shrimp, scallops, and fennel. Sprinkle with cheese, return to oven and bake until cheese is bubbly
  5. Garnish with reserved fennel leaves
