Pink Grapefruit Bars
2 cups all-purpose flour
½ cup confectioners’ sugar
¼ teaspoon salt
2 sticks butter, softened
2 cups granulated sugar
1 teaspoon Clabber Girl Baking Powder
4 large eggs
1 pink grapefruit
2 drops red food coloring (optional)
Preheat oven to 350’F.
Beat together the flour, confectioners’ sugar, salt and butter until a dough is formed and press it into the bottom of an aluminum 9 by 13-inch baking pan, (such as Doughmakers). Bake the crust for 20 minutes until pale golden.
Rinse the grapefruit under hot water. With a vegetable peeler remove half of the thin outer layer of zest from the grapefruit, being careful not to include any bitter white pith. Mince the zest very fine and measure 1-1/2 tablespoons, discarding any remaining. Squeeze the juice from the grapefruit and reserve ¼ cup.
Stir together the granulated sugar, baking powder, eggs, grapefruit juice, zest and food coloring and pour over the warm crust.
Bake for 25 minutes or until set. Let cool and chill the dessert until cold. Sprinkle with sifted confectioners’ sugar and cut into bars.
