Pineapple Salsa

Ingredients

  • 1 Orange
  • 1 (8 oz) can crushed pineapple, drained
  • 1/4 of a small red bell pepper, diced fine
  • 1 tsp. minced fresh ginger
  • 2 tbsp. chopped cilantro
  • 1/4 tsp. salt
  • 2 tbsp. fresh lime juice
  • 1 tbsp. brown sugar, packed
  • 1 tsp. vinegar
  • 2 tbsp. chopped red onion
  • 1/4 to 1 dried red chili, (to taste), crushed
  1. Grate the orange zest into a medium nonmetal bowl.
  2. Peel the orange, cut it into 1/4 inch dice and add to the bowl.
  3. Stir in the drained pineapple, the bell pepper, ginger, cilantro, salt, lime juice, brown sugar, vinegar, onion and chili.
  4. Cover and refrigerate till ready to serve
