Pineapple Marinated Eggs

  • 3/4 cup pineapple juice
  • 1/4 cup white vinegar
  • 1 onion, sliced
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 tablespoon pickling spices
  • 6 each hard-cooked egg, peeled
  1. Combine all ingredients except eggs in a saucepan and bring to a boil.
  2. Reduce heat and simmer 5 minutes.
  3. Pour over eggs in a sealable container.
  4. Cover and refrigerate at least overnight, turning occasionally to pickle evenly.
  5. To serve, remove eggs from liquid and slice in half lengthwise
