Pineapple Marinated Eggs
- 3/4 cup pineapple juice
- 1/4 cup white vinegar
- 1 onion, sliced
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1/2 tablespoon pickling spices
- 6 each hard-cooked egg, peeled
- Combine all ingredients except eggs in a saucepan and bring to a boil.
- Reduce heat and simmer 5 minutes.
- Pour over eggs in a sealable container.
- Cover and refrigerate at least overnight, turning occasionally to pickle evenly.
- To serve, remove eggs from liquid and slice in half lengthwise
