Pineapple Cream Cheese Logs

Ingredients

  • 2 (8-oz) pkgs cream cheese
  • 1 (8-oz) can crushed pineapple – Drain well
  • 1/4 t cinnamon
  • 1/2 cup finely chopped dry apricots
  • 1 C chopped pecans
  1. Combine cream cheese, pineapple, apricots and cinnamon; blend well and refrigerate about 1/2 an hour or when easy to handle.
  2. Form into 2 logs about 7×1 1/2. Roll each in pecans, wrap separately in plastic wrap, refrigerate until firm.
