Pineapple Cream Cheese Logs
- 2 (8-oz) pkgs cream cheese
- 1 (8-oz) can crushed pineapple – Drain well
- 1/4 t cinnamon
- 1/2 cup finely chopped dry apricots
- 1 C chopped pecans
- Combine cream cheese, pineapple, apricots and cinnamon; blend well and refrigerate about 1/2 an hour or when easy to handle.
- Form into 2 logs about 7×1 1/2. Roll each in pecans, wrap separately in plastic wrap, refrigerate until firm.
