Peppermint Loaf Cake

1/2 cup sifted cake flour
1/4 teaspoon Clabber Girl Baking Powder
3/4 cup sugar
4 egg whites
1/8 teaspoon salt
1/2 teaspoon cream of tartar
1/2 teaspoon vanilla
1/4 teaspoon almond extract
1/2 cup sugar
2 tablespoons finely crushed peppermint candy.

In a large bowl, sift together flour, baking powder, sugar and salt. In a separate bowl beat together egg whites, cream of tartar, vanilla and almond extract. Add 1/2 cup sugar, a little at a time, and beat until soft peaks form. Fold into flour mixture and add crushed peppermint candy.

Pour batter into ungreased 10x5x3 inch loaf pan. Bake at 375 degrees for 25 minutes. Cool upside down for one hour.
