Pennsylvania Dutch Hot Potato Salad


4 slices bacon

1 qt. hot cooked potatoes

1/2 c. chopped onion

1/4 c. vinegar

1 egg

1 tsp. sugar

Salt and pepper

2 hard-boiled eggs


Dice bacon and fry out. Add vinegar, salt, pepper, sugar, and beaten egg and cook slightly. Pour this over the hot cubed potatoes. Mix in onion and sliced hard-boiled eggs. Sprinkle with chopped parsley. Blend lightly and serve hot.
